Tacos do well here too. Maybe I should make them more often!

I also make oven chicken fajitas pretty often. They're fairly quick and easy.

Fried rice. The kids love it and it's an easy way to use up leftover vegetables.

Spaghetti and salad!

Usually chili, vegetable beef soup, or spaghetti. I try to keep the ingredients on hand for any of those three.
